Sanctuary Chief's Camp MasterChef Contest

This week the chefs at Sanctuary Chief's Camp in the Okavango Delta competed in their very own MasterChef contest. The chefs each had thirty minutes to prepare a dish of their choices before presenting it to the judges. The recipe for Kimonye's winning dish, an Asian-inspired chicken salad, can be found below.
Ingredients:
500g chicken breast, cut into strips
200g mixed lettuce
1 tomato
1 clove garlic
50ml olive oil
25ml soy sauce
1 tsp lemon juice
Handful of toasted sesame seeds
50g cucumber
Handful of black olives (optional)
Salt and pepper to taste
Chopped coriander
Method:
1. Saute the chicken until brown, set aside.
2. In the same pan fry the sesame seeds
3. Mix the lettuce with tomato, cucumber, olives.
4. Add chicken and mix.
5. Mix the olive oil with soy sauce, lemon juice and toasted sesame seeds
6. Pour sauce over chicken salad and garnish with chopped coriander
7. Serves 4
